About Nature’s Delicacies Microgreens and More

Nature’s Delicacies Microgreens and More was born out of my lifelong passion for health and helping others. My background in Health Science, coupled with my mother, aunt, and grandmother’s teachings of healthy garden-to-table cooking, are some of my fondest memories. They always encouraged my siblings, cousins, and me to “Eat ALL of your vegetables, they’re good for you!” and I actually enjoyed them. Learning to cook and eat vegetables at an early age has remained an integral part of my lifestyle and faith.

“Do you ever think about how the habits we form today can have a big impact on our future selves? I strongly believe that taking care of our body through intentional habits of diet and exercise is the key to living a healthy and happy life. What do you think?”

“Making Whole Foods Your Main Choice”

Incorporating microgreens into meals is one of my healthy habits. Microgreens are nutrient-rich vegetables that can help optimize your nutrient intake. At Nature’s Delicacies Microgreens and More, I would like to introduce you to these delicate and flavorful vegetables and share recipes for enjoying them with other whole foods.
Microgreens are the young seedlings of their respective full-size vegetable plant. Studies have shown that microgreens can pack as much as 4 to 40 times the nutrition per gram as their mature counterparts. Wang, Qin (2012), Mighty Microgreens.
Nature’s Delicacies Microgreens introduce a new concept of “delicacies” according to God’s design in Genesis 1:29. Microgreens and other plants are designed to provide vitalizing properties, making them “Nature’s Delicacies”. Recent studies on Blue Zone centenarians provide additional evidence that a plant-based diet and regular physical activity can increase vitality and longevity. Even at 100 years and above, these populations continue to live active lifestyles. (Source: Buettner, Dan. (2008), The Blue Zones: National Geographic.)
It is widely known that a large part of the food consumed by Americans is highly processed and lacks nutritional value. During the processing of these foods, natural nutrients are often removed and harmful chemicals like sugar, salt, and fats are added. These added chemicals can cause people to crave more of these harmful foods. With the convenience of ordering in and dining out, many families have fallen into a lifestyle of eating high-fat, low-fiber, and low-nutrient-dense foods. Their palates have become accustomed to the taste, texture, and chemicals of processed foods, making it difficult for them to enjoy whole foods. Additionally, many individuals don’t eat fresh fruits and vegetables and are unaware of the various types available, especially in food desert communities where access to healthy foods is limited. Fast food restaurants, liquor stores, and smoke shops are often more accessible than wholesome food in these communities, resulting in health issues like heart disease, diabetes, high blood pressure, and certain types of cancer. Research has shown that a plant-based diet can reduce these health risks and, in some cases, reverse diseases.
My mission is to encourage you to choose whole foods as your primary source of nutrition. Whether you aim to adopt a plant-based diet or simply wish to include more vegetables in your daily routine, I welcome you to dine with me. Nature’s Delicacies Microgreens and More is here to help improve your appetite and revitalize your health.
